I love making and eating spiced pumpkin cupcakes toward the beginning of fall. I like just about anything with pumpkin in it, pumpkin is even my favorite word. I guess you could say, I’m kind of obsessed with pumpkins. I found this very easy recipe, so I thought I should share it with all of you. My sister-in-law actually made a batch of these for Thanksgiving and I was lucky enough to get the recipe from her.

  • 2 cups sugar
  • 2 tsp cinnamon

Cinnamon Cream Cheese Icing

  • 3 cups powdered sugar
  • 1 block cream cheese (your favorite brand)
  • 1 1/2 tsp cinnamon
  • 1/4 cup unsalted butter
  • 1 can vanilla frosting (your favorite brand)

The Method:

Soften cream cheese and butter, then mix all ingredients together. (This recipe makes a lot of icing…you could probably make two batches of cupcakes with one batch of icing)

What kind of pumpkin desserts do you enjoy to eat and make?
